Frank and Sue Kok and their family, who have owned and operated the Blue Gibbon since the early 1980s, are opening an express takeout in Gallagher's food court, located on the lower level, the week of March 12. There will be a ribbon cutting ceremony on March 19 at 10:30 a.m. to celebrate the grand opening.
“We had talked about starting a franchise,” says Jim Eagan, who along with his wife, Yee Kok, are heading up the expansion. “Then one day Tom [Barlow, Xavier's director for auxiliary services] approached us and asked if we would consider coming to Xavier.”
Barlow has been transforming Gallagher's food court. Subway opened last year and Ryan’s Sports Pub has updated its menu, added big screen TVs and even hosts men’s basketball coach Sean Miller’s weekly radio show.
“Having the Blue Gibbon here at Xavier is not only a plus for our students and faculty, it’s a plus for the surrounding community,” says Barlow. “It strengthens Xavier’s ties to the community.”
One of the things that attracted Blue Gibbon to Xavier was the available space, which could be easily transformed to accommodate their menu. Many of the dishes will be prepared at the main restaurant on Tennessee Avenue and delivered to Xavier, which is just five minutes away. Most of the appetizers will be cooked right on site.
“We plan to offer four to five entrees on a regular basis and also offer a chef special that will change weekly,” says Kok. “We will also have fried rice with a variety of meats and a variety of appetizers, like egg rolls, spring rolls and crab rangoons.”
Blue Gibbon Xavier plans to be open 10:00 a.m.-10:00 p.m., seven days a week. But Eagan says they will adjust the hours depending on the demand. He also plans to hire up to 10 Xavier students to work at the Blue Gibbon.
“We’ve never done something like this before. It’s a challenge, but also a great opportunity,” says Kok.
